Bhindi Boogie – A 15 Minute Lady’s Finger Recipe

Crispy Fried Bhindi – A 15 Minute Recipe, as taught by my Amma

What happens when you’ve got just daal & chaawal made, and are craving for some crunch. You make some crispy bhindi instead.

A 15 minute recipe from the veggie basket/refrigerator to the plate. So here goes:

What you need:

Two handfuls of bhindi
Salt to taste
Haldi – 1 TSp
Red Chilli Powder – 1 TSp
Garam Masala – 1/2 – 1 TSp (As preferred)
Rawa – 5 TbSp
Wheat Flour – 5 TbSp
Oil – 2 TbSp
Water 1-2 TbSp

What do you do with the ingredients above? 

Clean & Dry the bhindi thoroughly.
Snip off 1 cm portion at either end
Slit the bhindi length-wise into half

Place the bhindi in a bowl
Add the haldi, chilli powder & garam masala
Adjust salt to taste

Heat the oil in a thick bottom pan

Add 1 TbSp of water to the bowl, just enough to coat the masala onto the bhindi
Add the rawa next so it too coats every piece of bhindi evenly
By now the oil should be sufficiently hot
Take the flour in a plate and coat the bhindi pieces with it
Shake off the excess flour and place the pieces in the pan
Adjust the flame to be just below the high mark
Turn the bhindi over in 2 minutes which is about time it takes to get one side crisp.
Then wait 2 minutes till the other side turns crisp too.

And, drain the bhindi onto a place, into a bowl, however you like it.

There! You’ve just made 15 Minute Crispy Bhindi as my Amma makes it & i love it 😀
